CHINESE NEW YEAR YU SHENG

Every Chinese New Year, a must have for Singaporeans who celebrate the occasion is the Yu Sheng which is basically a salad with raw fish. The various ingredients that go into the dish all have auspicious wishes attached to them. The dressing is delicious and just at the start of dinner, everyone tosses the salad as high as possible with chopsticks for good health, prosperity and long life.
